I have had this recipe sitting in my pantry for months {I tore it out from Sunset magazine} and finally tonight I decided to try it. We eat very simple meals... a lot of chicken, rice, pasta and veggies all in different variations...so this was a nice addition and Bird actual ate it {bonus}
Thai Peanut Sauce
Whisk 1/2 cup reduced fat peanut butter, 1T each lemon juice and soy sauce, 1/2 t ground ginger, 1/3 cup hot water. Spoon onto chicken and rice. {if you want to add a little kick...hubby said it would be good with red pepper flakes}.
I know peanut sauce is not new to anyone but it is for us at home and it's nice to have a change from the usual soy and teriyaki sauce.
I added a little soy sauce to my rice {I'm a salt junkie} but it didn't need it at all with the peanut sauce.
